?زعفران گیاهی با نام علمی Crocus sativus ، از راسته مارچوبه‌سانان و تیره ی زنبقیان می باشد. به خاطر رنگ زرد و قیمت بالایی که دارد به ادویه طلایی معروف شده است. بیش از ۴ هزار سال است که از زعفران برای خوش بو و خوش طعم کردن غذاها استفاده میشود. امروزه بیش از ۹۰ درصد زعفران دنیا در ایران تولید می شود.
